  • ⅔ cup mozzarella cheese

1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.

2. Wash and dry the zucchini, then slice it into ¼-inch thick rounds. You should end up with about 20 slices, depending on the size of your zucchini. Arrange them in a single layer on the prepared baking sheet, leaving a little space between each piece.

3. Cut each of the pepperoni slices into four smaller pieces. This makes them the perfect size for layering on top of the zucchini rounds.

4. Spoon about ½ teaspoon of pizza sauce onto each zucchini slice, spreading it evenly. Sprinkle a generous amount of shredded mozzarella cheese over the sauce, then lightly dust the tops with Italian seasoning for that classic pizza flavor.
