No Bread Cucumber Sandwiches – Easy, Low Carb & Keto-Friendly Snack!
I like making these no bread cucumber sandwiches on days when I wanted something that felt like a “real snack” but didn’t leave me feeling stuffed or weighed down. You know that awkward gap between lunch and dinner when you’re hungry but don’t want to ruin your appetite?
These little sandwiches hit the mark every time. I love the way the cool, crisp cucumber slices replace the bread. They have that crunchy, refreshing bite from the cucumber, and the cream cheese, cheddar, and ham make them feel like an actual treat – not just another boring low carb snack.

WOULD YOU LIKE TO SAVE THIS FOR LATER?
I like how simple they are to throw together, and honestly, I don’t miss the bread at all. They are great for tea parties, showers, or even just when you need a quick little fix out of the fridge.
How to Make No Bread Cucumber Sandwiches
Here are he ingredients you need to make these no bread cucumber sandwiches, plus step by step instructions for how to make them.
Ingredients
- 1 large cucumber
- 3-4 tbsp whipped cream cheese
- 3 cheddar cheese slices
- 3 deli ham slices

Step by Step Instructions
1. Use a vegetable peeler to peel strips along the length of the cucumber, leaving about half an inch of skin between each peel. This gives the slices a fun, striped look while keeping some of that fresh crunch. Then slice the cucumber into 24 thin, even rounds.

2. Cut the cheddar cheese and deli ham slices into quarters. This makes them the perfect size to fit right on top of the cucumber rounds without hanging over the sides.

3. Scoop the whipped cream cheese into a piping bag and snip off the end. Pipe a small dollop onto the center of half your cucumber slices (12 of them).

4. Place a quarter slice of cheddar cheese right on top of the cream cheese. The cream cheese will help hold it in place.

5. Next, fold each quarter slice of ham in half, and then fold it in half again, so it forms a little layered wedge. Set one folded piece of ham on top of each cheddar slice.

6. Finish by topping each stack with another cucumber slice, sandwich-style, and secure the whole thing with a toothpick through the center.

7. Serve them right away for the best crunch, or cover and chill in the fridge until you’re ready to snack or share!

These little cucumber sandwiches are such a simple way to mix things up when you’re tired of the same old snacks. You get that fresh crunch, some creamy texture, and enough flavor to keep things interesting – no bread needed. They work great for a quick bite, packing in a lunchbox, or setting out for something light at a get-together.
