How to Make Red, White and Blue Cheesecake Bites
Here are the ingredients you need to make these red, white and blue cheesecake bites, plus step by step instructions for how to make them.
Ingredients
- 1 cup graham cracker crumbs
- ¼ cup butter, melted
- 16 oz cream cheese, softened
- ½ cup sugar
- 0.25 oz packet unflavored gelatin
- 2 tbsp cold water
- 1 cup heavy cream
- Blue food coloring
- 1 cup Cherry pie filling

Step by Step Instructions
1. Line a mini muffin pan with paper or silicone liners. This makes removing the cheesecake bites easier and keeps them looking clean and neat.
2. In a small bowl, mix the graham cracker crumbs and melted butter until the mixture looks like wet sand and holds together when pressed.

3. Spoon the crumb mixture (be sure to divide evenly) into each muffin cavity. Press down firmly using the back of a spoon or your fingers to form a compact, even crust layer. Set aside.

4. In a large mixing bowl, beat the cream cheese and sugar on medium-high speed until the mixture is completely smooth and fluffy.

5. Slowly pour in the heavy cream while mixing on low speed. Once added, increase to medium and beat until the mixture thickens slightly and is well blended.

6. In a microwave-safe bowl, add the gelatin and cold water. Then microwave for 10–15 seconds, or until the gelatin is dissolved and the mixture becomes clear. Stir well.
7. Add the warm gelatin mixture to the cream cheese mixture and stir thoroughly until fully incorporated. This helps the cheesecake bites hold their shape.

8. Divide the cheesecake filling evenly between two bowls. In one bowl, add a few drops of blue food coloring and stir until the color is uniform. Leave the other bowl white.

9. Transfer each color to a separate piping bag. Pipe a small amount of the blue cheesecake layer into each muffin cavity, on top of the crust.
10. Using a small spoon, gently spread the blue layer from the center outward to the edges so it covers the crust evenly.

11. Repeat the process with the white cheesecake layer, spreading it carefully over the blue to create a flat, smooth top.

12. Place the muffin tin in the freezer for at least 2 hours, or until the cheesecake bites are firm and easy to handle.
13. Once set, remove the bites from the pan. Peel off the liners if desired. Just before serving, spoon a small dollop of cherry pie filling on top of each cheesecake bite to complete the red, white, and blue look.

14. Serve and enjoy!
