How to Make Antipasto Skewers

Here are the ingredients you need to make these antipasto skewers, plus step by step instructions for how to make them.

Ingredients

  • 17 large olives
  • ½ lb deli style hard salami
  • 12 oz marinated mozzarella balls
  • 1 pt cherry tomatoes

Step by Step Instructions

1. Take a large toothpick or appetizer skewer and slide on an olive. This not only adds a briny, tangy bite but also helps anchor the rest of the ingredients on the skewer.

2. Grab a slice of deli-style hard salami, fold it in half, then fold it once more into a quarter. This creates a nice, layered look and makes it easier to skewer. Thread it onto the skewer so it sits snugly under the olive.

3. Take a marinated mozzarella ball and slide it onto the skewer. If your mozzarella balls are large, you can cut them in half for a better fit. The creamy texture balances out the saltiness of the salami and olives.

4. Cap off the skewer with a cherry tomato for a juicy, fresh burst of flavor. If the tomatoes are particularly large, you can pierce them with a knife before threading to make assembly easier.

5. These skewers can be served immediately, but if you’re making them ahead of time, place them on a tray, cover them, and refrigerate until ready to serve. Let them sit at room temperature for a few minutes before serving so the flavors can shine.

In my case, a 12-ounce container of marinated mozzarella contained 17 pieces, while a pint of cherry tomatoes gave me 22. Your quantities may vary slightly, so adjust accordingly when assembling your skewers.
