- 1 small onion, diced
- 1 tbsp minced garlic
- 1 – 15.25 oz can corn, drained
- 1 – 15 oz can black beans, drained and rinsed
- 1 – 10 oz can Enchilada sauce
- 1 – 10 oz can Rotel
- 1 oz packet taco seasoning
- 32 oz bag Tater tots
- 2 cups colby jack cheese, shredded
- 1 roma tomato, diced
- ¼ cup sliced black olives
- 2 green onions, diced

Step by Step Instructions
1. Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
2. Dice the onion, tomato and green onions, then set them aside.

4. Carefully drain off any excess grease. Add the corn, black beans, enchilada sauce, Rotel, and taco seasoning to the skillet. Stir well and let the mixture simmer on low for about 5 minutes.

5. Spread the beef mixture evenly into the prepared casserole dish. Arrange the Tater tots in a single, even layer over the top.

6. Bake uncovered for 35 minutes, until the Tater tots are golden and crisp.
7. Remove the casserole from the oven and sprinkle the cheese evenly over the top. Return to the oven and bake for another 8-10 minutes, just until the cheese is melted.
