Made with sweet corn, the green chilis and Rotel give it a nice kick, the crispy bacon pieces add that perfect savory touch, and the creamy, cheesy base ties it all together.

  • 2 – 15.25 oz cans Southwest Corn, drained
  • 10 oz can Rotel, drained
  • 1 cup cheddar cheese, finely shredded
  • 4 oz can green chilis, drained
  • ⅓ cup bacon pieces
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 green onion, diced (for topping)

Step by Step Instructions

1. Dice the green onion into small pieces. Set it aside, you’ll use some in the dip and the rest as a garnish.

2. In a large mixing bowl, add the drained Southwest corn, Rotel, shredded cheddar cheese, green chilis, and bacon pieces. Give everything a good toss to ensure the ingredients are evenly distributed.

3. In a separate smaller bowl, whisk together the sour cream, mayonnaise, garlic powder, salt, and pepper. This creamy mixture is what gives the dip its rich, smooth texture and enhances all the flavors.
