Ingredients

  • 2 - 15.25 oz cans Southwest Corn, drained
  • 10 oz can Rotel, drained
  • 1 cup cheddar cheese, finely shredded
  • 4 oz can green chilis, drained
  • cup bacon pieces
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 green onion, diced (for topping)

Instructions

  • Dice the green onion into small pieces. Set it aside, you’ll use some in the dip and the rest as a garnish.
  • In a large mixing bowl, add the drained Southwest corn, Rotel, shredded cheddar cheese, green chilis, and bacon pieces. Give everything a good toss to ensure the ingredients are evenly distributed.
  • In a separate smaller bowl, whisk together the sour cream, mayonnaise, garlic powder, salt, and pepper. This creamy mixture is what gives the dip its rich, smooth texture and enhances all the flavors.
  • Pour the creamy dressing over the corn mixture and gently fold everything together until well combined. Make sure every bite is coated in that flavorful, cheesy goodness.
  • Transfer the dip to a serving bowl and sprinkle the diced green onion on top for a pop of color and a bit of fresh flavor.
  • Cover the bowl with plastic wrap and let the dip chill in the fridge for at least an hour. This allows the flavors to meld together and makes the dip even better. When you’re ready to serve, grab a bag of Fritos Scoops, tortilla chips, or your favorite crackers, and dig in!
