Air Fryer Strawberry Cheesecake Rollups (Low Carb & Keto-Friendly)
I’ve been playing around with low carb desserts that actually taste good, and these air fryer strawberry cheesecake rollups hit the mark.
They remind me of those strawberry cream cheese pastries I used to grab at bakeries, but without all the sugar. (They are low carb and way easier to make at home.)
What I like most is how simple they are – minimal ingredients, no baking, and they crisp up perfectly in the air fryer. The cream cheese gets warm and soft, the strawberries give that little bit of fresh sweetness, and the tortilla wrap turns golden and slightly crunchy.

This is one of those recipes I make when I want something sweet but don’t want to derail things too much.
How to Make Strawberry Cheesecake Rollups in an Air Fryer
Here are the ingredients you need to make these air fryer strawberry cheesecake rollups, plus step by step instructions for how to make them.
Ingredients
- 6 low carb street taco size flour tortillas
- 4 oz cream cheese, softened
- ¼ cup Swerve powdered sugar substitute, reserving 1 tsp for dusting the tops
- ¼ cup strawberries, chopped
- 1-2 tbsp butter, melted

Step by Step Instructions
1. Start by dicing the strawberries into small pieces. You want them small enough so they mix easily into the cream cheese and don’t poke through the tortillas when rolling.

2. In a medium bowl, combine the softened cream cheese and powdered sugar substitute (reserve a little for dusting at the end). Stir until smooth and creamy. Then gently fold in the chopped strawberries so they’re evenly distributed throughout the mixture.

3. Lay out your tortillas on a clean surface. Spoon the strawberry cream cheese mixture down the center of each tortilla in a line. Don’t overfill, just enough to get a good bite of filling in every roll.

4. Take each tortilla and roll it tightly around the filling, like you’re making a taquito. Make sure the ends are tucked in just a bit to help keep everything contained.

5. Melt the butter and brush it over both sides of each rolled tortilla. This helps them crisp up nicely in the air fryer and adds a little extra flavor.

6. Place the rollups seam-side down in your air fryer basket, leaving a little space between each one. Air fry at 385°F for 10 minutes, flipping them halfway through to make sure both sides get golden and crisp.

7. Once they are done, sprinkle the tops with a little reserved Swerve powdered sugar for that classic cheesecake dessert touch.

8. Serve them warm while the filling is soft and gooey. They’re perfect as-is, or you can add a few extra chopped strawberries on the side.

These rollups are just the right mix of creamy, fruity, and crisp. They’re quick to pull together, and honestly, they don’t taste like a “keto” dessert at all. Definitely keeping this one in the rotation for when the sweet cravings hit.
