Ingredients

  • 6 low carb street taco size flour tortillas
  • 4 oz cream cheese, softened
  • ¼ cup Swerve powdered sugar substitute, reserving 1 tsp for dusting the tops
  • ¼ cup strawberries, chopped
  • 1-2 tbsp butter, melted

Instructions

  • Start by dicing the strawberries into small pieces. You want them small enough so they mix easily into the cream cheese and don’t poke through the tortillas when rolling.
  • In a medium bowl, combine the softened cream cheese and powdered sugar substitute (reserve a little for dusting at the end). Stir until smooth and creamy. Then gently fold in the chopped strawberries so they’re evenly distributed throughout the mixture.
  • Lay out your tortillas on a clean surface. Spoon the strawberry cream cheese mixture down the center of each tortilla in a line. Don’t overfill, just enough to get a good bite of filling in every roll.
  • Take each tortilla and roll it tightly around the filling, like you’re making a taquito. Make sure the ends are tucked in just a bit to help keep everything contained.
  • Melt the butter and brush it over both sides of each rolled tortilla. This helps them crisp up nicely in the air fryer and adds a little extra flavor.
  • Place the rollups seam-side down in your air fryer basket, leaving a little space between each one. Air fry at 385°F for 10 minutes, flipping them halfway through to make sure both sides get golden and crisp.
  • Once they are done, sprinkle the tops with a little reserved Swerve powdered sugar for that classic cheesecake dessert touch.
  • Serve them warm while the filling is soft and gooey. They’re perfect as-is, or you can add a few extra chopped strawberries on the side.
