Start by dicing the strawberries into small pieces. You want them small enough so they mix easily into the cream cheese and don’t poke through the tortillas when rolling.
In a medium bowl, combine the softened cream cheese and powdered sugar substitute (reserve a little for dusting at the end). Stir until smooth and creamy. Then gently fold in the chopped strawberries so they’re evenly distributed throughout the mixture.
Lay out your tortillas on a clean surface. Spoon the strawberry cream cheese mixture down the center of each tortilla in a line. Don’t overfill, just enough to get a good bite of filling in every roll.
Take each tortilla and roll it tightly around the filling, like you’re making a taquito. Make sure the ends are tucked in just a bit to help keep everything contained.
Melt the butter and brush it over both sides of each rolled tortilla. This helps them crisp up nicely in the air fryer and adds a little extra flavor.
Place the rollups seam-side down in your air fryer basket, leaving a little space between each one. Air fry at 385°F for 10 minutes, flipping them halfway through to make sure both sides get golden and crisp.
Once they are done, sprinkle the tops with a little reserved Swerve powdered sugar for that classic cheesecake dessert touch.
Serve them warm while the filling is soft and gooey. They’re perfect as-is, or you can add a few extra chopped strawberries on the side.
