How to Make Apple Coffee Cake

Here are the ingredients you need to make this Apple Coffee Cake recipe, plus step by step instructions for how to make it.

  • 1 ¾ cups all purpose flour
  • 1 cup light brown sugar, packed
  • 1 tsp cinnamon powder
  • ¼ tsp salt
  • 1 cup unsalted butter, divided
  • 13.25 oz box vanilla cake mix
  • 2 tbsp vegetable oil
  • 2 tsp vanilla
  • 2 large eggs, room temperature
  • ¾ cup sour cream, room temperature
  • 21 oz Apple pie filling
  • ½ cup powdered sugar
  • 2 tbsp milk

Step by Step Instructions

1. Preheat the oven to 350°F. Line a 9 x 13-inch baking dish with parchment paper, leaving enough overhang to make the cake easier to lift out after cooling.

2. Add ¾ cup butter to a small saucepan and melt over medium-low heat. Continue cooking, stirring occasionally, until the butter begins to bubble.

3. In a large bowl, whisk together the flour, brown sugar, cinnamon, and salt, breaking up any lumps in the brown sugar.

4. Pour the melted butter into the flour mixture and gently stir until all the dry ingredients are moistened. The mixture should be crumbly rather than smooth. Place the crumble topping in the refrigerator while you make the cake batter.

5. In a separate large bowl, whisk together the cake mix, 4 tablespoons melted butter, vegetable oil, vanilla, eggs, and sour cream until well combined and smooth.

6. Transfer the batter to the prepared baking dish and spread it into an even layer.

7. Spoon the apple pie filling over the center of the batter, spreading it out while leaving a small border of cake batter visible around the edges.
