  • 1 large head cauliflower, cut into florets (or 2 – 12 oz bags frozen, steamed until tender)
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 tbsp minced garlic
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 2 cups sharp cheddar cheese, shredded and divided
  • ½ cup bacon pieces
  • Chopped parsley to garnish

Step by Step Instructions

1. Preheat the oven to 425°F. Lightly grease a medium-sized baking dish and set it aside.

2. If using fresh cauliflower, cut it into evenly sized florets. Steam the cauliflower until just tender, but not overly soft. Drain well so excess moisture doesn’t make the casserole watery.

3. In a small bowl, stir together the mayonnaise, sour cream, minced garlic, and seasonings until well combined.

4. Place the steamed cauliflower in a large mixing bowl. Add half of the shredded cheese and half of the bacon. Pour the creamy mixture over the top and gently toss until the cauliflower is evenly coated.

5. Transfer the cauliflower mixture to the prepared baking dish and spread it into an even layer.

6. Spread the remaining cheese and bacon over the cauliflower mixture.
