Pour the berry blue Jello powder into a medium-sized, heat-safe mixing bowl.
Pour 1 cup of water into a medium saucepan and bring to a boil over high heat. Pour the hot water over the Jello powder. Use a whisk or spoon to stir the mixture for about 2-3 minutes, making sure the gelatin completely dissolves. You’ll know it’s ready when the liquid is smooth and clear, without any grainy texture.
Add 1 cup of cold water to the dissolved gelatin mixture and give it a quick stir. This helps cool down the mixture and sets the gelatin properly. Cover the bowl with plastic wrap and place it in the refrigerator. Let it chill for at least 4 hours, or until the Jello is firm and completely set.
Once the Jello has set, it’s time to put together the mousse cups. Grab your serving cups. Spoon a layer of the gelatin into the bottom of each cup. Then, add a layer of whipped topping. Continue layering, alternating Jello and whipped topping, until you have 3-4 layers, finishing with whipped topping on top..
For a little extra flair, add a dollop of whipped topping on the very top layer. Top with blue sugar sprinkles to give it a festive look.
