BLT Bites

These BLT bites take everything great about the classic sandwich and turn it into an easy-to-eat appetizer. Perfect for any gathering.

Ingredients

  • ½ loaf baguette bread
  • 24 - 1- inch pieces of lettuce, about ¼ of a head of lettuce
  • 8 slices of bacon
  • 12 cherry tomatoes

Instructions

  • Wash the lettuce and pat dry with a paper towel. Then cut into small, bite-sized pieces, about 1 inch each. Next, slice the cherry tomatoes in half and set them aside.
  • Using a serrated knife, carefully slice the baguette into 24 thin rounds, about ½ inch thick. Keeping the slices uniform will ensure even layering and easy stacking.
  • Cut the bacon slices into thirds. Heat a medium or large skillet over medium-low heat and add the bacon pieces in a single layer. Cook until they become slightly crispy but not too crunchy, as they should still have a little chew to them. Once done, transfer the cooked bacon to a paper towel-lined plate to drain any excess grease.
  • Line a baking sheet or tray with parchment paper to prevent sticking. Lay out the baguette slices in a single layer, ensuring they have enough space so they don’t overlap. Place a piece of lettuce over each baguette slice.
  • Top the lettuce with a piece of crispy bacon followed by a halved cherry tomato, making sure each layer stays in place.
  • To keep everything together, insert a toothpick straight through the center of each BLT Bite. This makes them easy to pick up and eat without the layers sliding apart.
  • Serve immediately and enjoy these bite-sized BLT appetizers while they’re fresh!
