Line a large baking sheet or tray with parchment paper and set it aside.
Cut a thin slice from each end of the apples. Stand each apple upright, then slice down each side of the core to create two thick slices, about ½ to ¾ inch thick, from each apple.
Insert a popsicle stick into the bottom center of each apple slice, pushing it about halfway through. (You can use the tip of a knife to make a small starter hole first).
Pat both sides of each apple slice thoroughly dry with paper towels. Removing excess moisture helps the chocolate stick better.
Melt the milk chocolate according to the package directions. Dip each apple slice into the chocolate, using a spoon to coat any bare spots if needed. Let the excess chocolate drip back into the bowl, then place the slices on the prepared baking sheet, making sure they don't touch.
Refrigerate for 5 to 10 minutes, or until the chocolate has hardened.
Combine the caramel baking bits and heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until the caramel is smooth and fully melted.
Let it cool for a minute or two, then drizzle it over the chocolate-coated apple slices.
Melt the white chocolate according to the package directions and drizzle it over the caramel. Immediately sprinkle the chopped pecans on top before the chocolate begins to set.
Return the apple slice pops to the refrigerator for about 10 minutes, or until everything is firm. Serve chilled and enjoy.
