Cinnamon Apple French Toast Casserole

This Cinnamon Apple French Toast Casserole combines soft bread, warm cinnamon, and sweet apple pie filling for an easy baked fall breakfast or brunch.

Ingredients

  • 1 loaf country white bread, cut into 1 inch pieces
  • 8 eggs
  • 2 cups milk
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 21 oz can apple pie filling

Instructions

  • Preheat the oven to 350°F. Lightly grease a 9x13-inch baking dish with nonstick cooking spray or butter.
  • Cut the bread into roughly 1-inch cubes and spread them evenly across the bottom of the prepared baking dish.
  • In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  • Pour the egg mixture over the bread. Gently toss or press the bread down so the pieces are coated and have a chance to soak up the mixture.
  • Spoon the apple pie filling over the bread, spreading it across the casserole so you get some in every serving.
  • Bake uncovered for 50–55 minutes, or until the center is set and the top is lightly golden. Remove from the oven and let the casserole rest for a few minutes before slicing and serving.

Notes

Make Ahead: Assemble the casserole the night before, cover, and refrigerate overnight. In the morning, let it sit at room temperature while the oven preheats, then bake as directed, adding a few extra minutes if needed.
