Ingredients

  • 1 - 28 oz bag (frozen) Potatoes O’Brien with Onions and Peppers
  • 12 oz package beef smoked sausage, cut into 1 inch pieces
  • 8 oz cheddar cheese, shredded - divided
  • 10.5 oz can condensed cream of mushroom soup
  • ½ cup sour cream
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  • Lightly coat the inside of your slow cooker with nonstick spray or a thin layer of oil.
  • Slice the smoked sausage into bite-sized pieces, about 1 inch thick.
  • Add the potatoes, sausage, and 1½ cups of shredded cheese to the crockpot. Gently stir so everything is evenly mixed.
  • In a separate bowl, whisk together the condensed soup, sour cream, salt, and pepper until smooth.
  • Pour the sauce over the potato and sausage mixture, then stir to make sure everything is well coated.
  • 6. Spread the remaining cheese evenly over the top.
  • Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours, until the potatoes are fork-tender but still hold their shape.
