Lightly coat the inside of your slow cooker with nonstick spray or a thin layer of oil.
Slice the smoked sausage into bite-sized pieces, about 1 inch thick.
Add the potatoes, sausage, and 1½ cups of shredded cheese to the crockpot. Gently stir so everything is evenly mixed.
In a separate bowl, whisk together the condensed soup, sour cream, salt, and pepper until smooth.
Pour the sauce over the potato and sausage mixture, then stir to make sure everything is well coated.
6. Spread the remaining cheese evenly over the top.
Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours, until the potatoes are fork-tender but still hold their shape.
