Ingredients

  • 32 oz frozen diced hash browns
  • 4 cups chicken broth
  • 10.5 oz can cream of chicken soup
  • 10.5 oz can cream of mushroom soup
  • 1/3 cup bacon pieces, plus more to serve
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 oz cream cheese
  • 1 cup cheddar cheese, plus more to serve

Instructions

  • Lightly grease the insert of your slow cooker to help prevent sticking and make cleanup easier.
  • Add the frozen hash browns, chicken broth, condensed soups, cooked bacon, and seasonings to the slow cooker. Stir everything together until well combined.
  • Cover and cook on High for 3 hours or Low for 6 hours.
  • About 1 hour before the cooking time is up, cut the cream cheese into small cubes. Add the cubes and the shredded cheddar cheese to the slow cooker, then stir until everything is well combined.
  • Cover the slow cooker and continue cooking for the remaining hour, stirring once or twice if desired, until the soup is creamy.
  • Serve the soup in bowls and garnish each serving with extra shredded cheddar cheese and crispy bacon for the ultimate loaded potato soup.

Notes

This recipe can serve anywhere from 4 to 6 people depending on portion size.
Cook Time: Cook on High for 3 hours or Low for 6 hours.
