- ½ loaf French baguette, cut into 12 slices (discarding the ends)
- ¼ cup shredded parmesan
- 4 Roma tomatoes, diced
- ⅓ cup chopped fresh basil
- 1 ½ tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp minced garlic
- ½ tsp pepper
- ½ tsp salt
Cut the tomatoes into small bite-sized pieces and finely chop the fresh basil. Add both to a medium mixing bowl.
Pour in the olive oil and balsamic vinegar, then add the minced garlic, salt, and pepper. Stir everything together until the tomatoes are evenly coated. Let the mixture sit while you prepare the bread so the flavors can blend.
Slice the bread into 12 pieces at a slight angle to create larger surfaces for the topping. Place the slices in a single layer on a parchment-lined baking sheet.
Sprinkle a little parmesan cheese over each slice of bread. Place under the broiler for 2-3 minutes, or until the bread is toasted and the cheese is lightly golden. Keep a close eye on it so it doesn’t burn.
Spoon the tomato mixture over the toasted bread slices just before serving.
Serve immediately while the bread is still crisp.
