Greek Salad Bites
These Greek salad bites take everything great about the classic Greek salad and turn it into an easy-to-eat appetizer.

- 1 cucumber, peeled and sliced into 18 pieces
- ⅓ cup feta, crumbled
- 2 tbsp olive oil
- 1 tsp oregano
- 9 kalamata olives, sliced lengthwise
- 9 grape tomatoes, halved
Peel the cucumber and slice it into 18 even rounds, about ½ inch thick. Then, slice the kalamata olives lengthwise and cut the grape tomatoes in half. Set everything aside for easy assembly.
In a small bowl, mix the olive oil and oregano until well combined. Gently fold in the crumbled feta, making sure it gets evenly coated with the seasoning. This step adds extra flavor and helps the feta hold together a bit better when assembling the bites.
Take a small spoon and scoop a little of the seasoned feta onto one corner of each cucumber slice.
Then, place a halved grape tomato next to it, followed by a slice of kalamata olive.
Arrange the bites on a serving platter and enjoy immediately, or cover and refrigerate until ready to serve. If making ahead, serve within a few hours for the freshest texture and flavor.
