Ingredients

  • 15.25 oz white cake mix
  • 8 tbsp unsalted butter, softened
  • 2 large eggs
  • 2 tsp peppermint extract
  • ½ tsp vanilla extract
  • Green gel food coloring
  • ¼ cup powdered sugar
  • 3 tbsp cornstarch
  • Red heart-shaped sprinkle

Instructions

  • Preheat your oven to 375°F and line a baking sheet with parchment paper so the cookies don’t stick.
  • In a large mixing bowl, combine the cake mix, softened butter, and eggs. Stir until a thick dough forms and everything is evenly blended.
  • Add the peppermint extract, vanilla extract, and a few drops of green gel food coloring. Mix well until the color is evenly distributed. Add more coloring if you want a brighter green.
  • In a small bowl, whisk together the powdered sugar and cornstarch. This will give the cookies their signature crinkle look.
  • Use a cookie scoop (about 1½ tablespoons) to portion the dough. Roll each dough ball in the powdered sugar mixture until fully coated.
  • Place the coated dough balls on the prepared baking sheet, leaving space between each one. Bake for 10-15 minutes, or until the edges are set and the tops have that crinkled look.
  • While the cookies are still warm, press a red heart sprinkle on top of each one.
  • Let them cool on the pan for about 5 minutes before moving them to a rack. Serve once cooled or store in an airtight container.
