Ingredients

  • 12 slices genoa salami
  • 12 slices sandwich pepperoni
  • 12 slices ham thin sliced
  • 12 slices provolone I used Sargento Thin slices
  • 2 tsp oregano
  • 1 Roma tomato diced small
  • ¼ cup red onion diced small

Instructions

  • Dice the Roma tomato and red onion into small, evenly sized pieces. This will ensure a balanced flavor in every bite. Set them aside in separate bowls for easy assembly.
  • On a clean tray or baking sheet, arrange the slices of meat and cheese in a vertical chain, slightly overlapping each slice. Start with the genoa salami at the bottom, followed by the sandwich pepperoni, provolone cheese, and finally the thin-sliced ham at the top. Leave about ½ to 1 inch of space between each row for easy rolling.
  • Sprinkle the oregano evenly across the bottom portion of the ham slices. Then, distribute the diced tomatoes and red onions on top of the oregano, focusing on the same lower section. This placement ensures the filling stays secure when rolling.
  • Beginning at the bottom edge of the ham (the section with the seasoning and veggies), carefully roll the layers upward. Keep the roll tight as you go, ensuring the ingredients stay in place. Roll until you reach the top slice of salami.
  • Once rolled, insert a toothpick through the center of each roll to hold it together. This step is key for serving and keeps everything intact.
  • Serve on a platter and enjoy! These roll ups are delicious served fresh, but you can also cover them tightly and refrigerate if you’re making them ahead of time.
