Mushroom Spinach Phyllo Cups

- ½ cup finely chopped mushrooms
- ¼ cup shredded mozzarella
- ¼ cup chopped spinach, packed tight
- 2 tbsp bacon pieces
- 15 phyllo shells
Preheat your oven to 350°F and line a baking sheet with parchment paper for easy cleanup.
Finely chop the mushrooms and spinach so they fit nicely into the phyllo shells.
In a medium bowl, mix together the chopped mushrooms, spinach, shredded mozzarella, and bacon pieces until everything is evenly combined.
Spoon a small amount of the mixture into each phyllo cup. Then place the filled cups on the prepared baking sheet, leaving a little space between each one.
Bake for about 15 minutes, or until the filling is hot and the cheese is melted.
Let the phyllo bites cool slightly, then serve them warm and enjoy.
