- 1 tbsp olive oil
- 1 tbsp minced garlic
- 1 onion, chopped
- 1 lb ground beef
- 14.5 oz can petite diced tomatoes, drained
- 14 oz can red kidney beans, drained
- 3 cups beef broth
- 8 oz elbow pasta noodles, uncooked
- 2 cups Monterey Jack cheese, shredded
- 1.25 oz packet chili seasoning
- Fresh parsley to garnish
Heat the oil in a large skillet over high heat. Add the chopped onion and garlic, then cook for about 3 minutes, stirring frequently, until the onion starts to soften and becomes fragrant.
Add the ground beef to the skillet. Cook until browned all the way through, breaking it into small crumbles with a spoon as it cooks. Drain any excess grease if needed.
Add the remaining ingredients to the skillet, except for the cheese. Stir everything together well so the pasta is evenly coated, then reduce the heat to medium.
Cover the skillet and let the mixture simmer for about 15 minutes, stirring once or twice, until the noodles are tender and cooked to your preference. Remove from the heat, stir in half of the cheese, then sprinkle the rest over the top. Cover again for a few minutes so the cheese melts.
Finish by sprinkling chopped parsley over the top.
Serve warm and enjoy.
