Pico de Gallo

Ingredients

  • 2-3 tomatoes
  • 1 red onion
  • 2.5 tbsp. lemon juice
  • 1/2-1 jalapeno
  • 5 sprigs cilantro
  • 1 sprig mint
  • 1 tsp granulated garlic
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp salt

Instructions

  • Cut the tomatoes in half and remove the seeds, then finely dice them and transfer to a large mixing bowl. Peel and finely chop the onion. Roughly chop the cilantro and mint, and thinly slice the jalapeno after removing the seeds and membrane.
  • Rinse the lemon well, cut it in half, and squeeze the juice into a small bowl, removing any seeds as needed.
  • Add the onion, herbs, and chili to the tomatoes. Sprinkle in the seasonings and toss everything together until combined.
  • Pour the fresh lemon juice over the mixture and stir well so the ingredients and seasonings are evenly distributed throughout the salsa.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to blend. Stir once more before serving.
