- 1 lb Ground beef
- 1 oz packet taco seasoning
- 9 oz bag restaurant style tortilla chips
- 16 oz can refried beans
- 2 cups Colby jack, shredded
- 2 jalapenos, sliced
- ½ cup guacamole
- ½ cup sour cream
- ½ cup sliced olives
- 1 Roma tomato, diced
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper for easy cleanup.
Heat a medium skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned. Drain off excess grease, then stir in the taco seasoning along with the recommended amount of water. Simmer for a few minutes until the beef is well coated and saucy.
While the beef cooks, slice the jalapenos and dice the tomato. Set aside.
Spread the tortilla chips out in an even layer on the prepared baking sheet, overlapping slightly if needed.
Add spoonfuls of refried beans over the chips, then scatter the seasoned ground beef evenly on top.
Sprinkle the shredded cheese over everything, making sure most of the chips are covered. Add the sliced jalapenos across the top.
Bake for about 12 minutes, or until the cheese is fully melted and bubbly.
Remove the pan from the oven and add spoonfuls of guacamole and sour cream. Finish with sliced olives and diced tomatoes.
Serve right away while hot and enjoy straight from the pan.
