Sloppy Joe Casserole with Biscuits

Ingredients

  • 1 lb ground beef
  • ½ medium onion, diced
  • Salt and pepper
  • 15 oz sloppy joe sauce
  • 16.3 oz can refrigerated biscuits (we used Grands Homestyle)
  • 2 cups cheddar cheese, shredded

Instructions

  • Preheat your oven to 350°F. Lightly grease a 9×13-inch casserole dish and set it aside.
  • Dice the onion and set aside.
  • Add the ground beef and diced onion to a large skillet. Season with salt and pepper, then cook over medium heat, breaking up the meat as it cooks, until the beef is fully browned. Drain off any excess grease.
  • While the beef cooks, cut the biscuits into quarters. Place them in a bowl and toss with 1 cup of the shredded cheese until evenly coated.
  • Add the sloppy joe sauce to the cooked beef mixture and stir until well combined. Gently fold in the biscuit and cheese mixture.
  • Transfer the mixture into the prepared casserole dish and spread evenly, then sprinkle the remaining cup of cheese over the top.
  • Bake for 30 minutes, or until the biscuits are cooked through and the cheese is melted and bubbly.
  • Remove from the oven and serve warm.
