Ingredients

  • 2 8 oz blocks of cream cheese, softened
  • 16 oz finely shredded white cheddar cheese, room temperature, 1 cup set aside
  • 1 oz package ranch seasoning mix
  • 1 baby carrot
  • 14 whole peppercorns
  • 2 pretzel sticks

Instructions

  • In a large mixing bowl, beat the cream cheese until smooth and fluffy. Add the ranch seasoning and mix until fully combined.
  • Set aside 1 cup of shredded cheddar cheese for later.
  • Mix the remaining shredded cheddar into the cream cheese mixture until evenly blended.
  • Place a sheet of parchment paper and two sheets of plastic wrap on your work surface. Using gloved hands to keep things neat, shape the cheese mixture into two balls, one slightly larger for the body and a smaller one for the head. Flatten each ball slightly into a disk.
  • Wrap each disk separately in plastic wrap and refrigerate for about 2 hours, or until ready to serve. Before serving, let the reserved cup of cheddar sit at room temperature for about an hour.
  • Place the two cheese disks on the parchment so they touch, pressing gently to join them. Sprinkle the reserved cheddar over the top and sides, lightly pressing it in to coat. Use a wide spatula to carefully transfer the snowman onto a serving platter.
  • Press the baby carrot into the center of the top disk for the nose.
  • Add two peppercorns above the carrot for eyes and seven more below to form a smile.
  • Place five peppercorns down the center of the bottom disk for buttons.
  • Insert a pretzel stick on each side for arms. Serve with crackers, pretzels, or veggies and enjoy!
