Ingredients

  • ½ lb Ground beef
  • 2 tbsp taco seasoning
  • 1 cup cooked white rice
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup lettuce
  • 1 Roma tomato
  • 2-3 tbsp sour cream
  • 2-3 tbsp salsa
  • 1-2 sliced green onions
  • Handful or tortilla chips, crushed

Instructions

  • Chop the lettuce, tomatoes, and green onions into bite-sized pieces and set aside.
  • Add the ground beef to a skillet over medium heat and cook until browned, breaking it up as it cooks. Drain off any excess grease, then stir in the taco seasoning. Add a splash of water if needed and stir until the seasoning is evenly distributed.
  • Divide the cooked rice between two serving bowls, spreading it evenly across the bottom of each bowl.
  • Spoon the seasoned ground beef over the rice, dividing it evenly between the bowls, then sprinkle the shredded cheese on top.
  • Arrange the lettuce and tomatoes around the edge of each bowl, dividing them evenly between the two bowls.
  • Add a dollop of sour cream and salsa to the center of each bowl.
  • Finish with the green onions and crushed tortilla chips.
  • Serve immediately.
