Taco Rice Bowl with Ground Beef

- ½ lb Ground beef
- 2 tbsp taco seasoning
- 1 cup cooked white rice
- 1/2 cup cheddar cheese, shredded
- 1/2 cup lettuce
- 1 Roma tomato
- 2-3 tbsp sour cream
- 2-3 tbsp salsa
- 1-2 sliced green onions
- Handful or tortilla chips, crushed
Chop the lettuce, tomatoes, and green onions into bite-sized pieces and set aside.
Add the ground beef to a skillet over medium heat and cook until browned, breaking it up as it cooks. Drain off any excess grease, then stir in the taco seasoning. Add a splash of water if needed and stir until the seasoning is evenly distributed.
Divide the cooked rice between two serving bowls, spreading it evenly across the bottom of each bowl.
Spoon the seasoned ground beef over the rice, dividing it evenly between the bowls, then sprinkle the shredded cheese on top.
Arrange the lettuce and tomatoes around the edge of each bowl, dividing them evenly between the two bowls.
Add a dollop of sour cream and salsa to the center of each bowl.
Finish with the green onions and crushed tortilla chips.
Serve immediately.
