- ¼ of a regular watermelon
- 8 oz block feta
- 12 mint leaves
- 12 blueberries
Using a sharp knife, cut the block of feta cheese into 12 bite-sized cubes. Try to keep them as uniform as possible for a neat presentation. Then slice the watermelon into slightly larger cubes, aim for about 1 to 1½ inch squares so they can support the toppings.
On a serving platter or tray, start by placing each watermelon cube as the base. Gently set a cube of feta on top of each piece of watermelon. Next, place a fresh mint leaf over the feta, followed by a single blueberry on top.
Carefully insert a toothpick straight down through the blueberry, mint, feta, and into the watermelon to hold everything in place. Repeat for all 12 skewers.
Serve immediately for the freshest taste and texture, or refrigerate until you're ready to serve.
