Ingredients
8ouncesblock feta
1/2cupplain Greek yogurt
1garlic clove minced
½tsplemon juice
1tablespoonextra virgin olive oil, plus more for topping
Fresh chopped parsley and a few Kalamata olives for topping
Instructions
Chop the fresh parsley and mince the garlic. Cut the block of feta cheese into small cubes to make blending easier.
Add the feta cubes and Greek yogurt to a food processor. Blend until the mixture is smooth and creamy, scraping down the sides as needed. Add the minced garlic, lemon juice, and one tablespoon of olive oil. Blend again until well combined and silky.
Transfer the whipped feta mixture to a serving bowl or dish. Use a spatula to smooth the surface. Drizzle a bit of olive oil on top, then garnish with the chopped parsley and a few Kalamata olives.
Serve immediately with pita, crackers, or fresh vegetables.
Notes
Store leftovers in an airtight container in the fridge for 2-3 days. Stir well before serving.
