  • 6 oz Bow Tie pasta noodles
  • 1 cucumber, sliced and halved
  • 2 Roma tomatoes, diced into large chunks
  • 1/2 red onion, diced into large slices
  • 1/2 cup Artichoke Hearts

  • 1/4 cup olive oil
  • 3 tbsp apple cider vinegar
  • 2 tsp oregano
  • salt and pepper to taste

1. Wash and chop all of the vegetables into bite-sized pieces. Set aside while you prepare the pasta and dressing.

2. Cook the pasta according to the package instructions until tender. Drain well, then rinse under cold water to stop the cooking process and cool the pasta completely.

3. In a small bowl or measuring cup, whisk together the olive oil, apple cider vinegar, and seasonings until well combined.
