Red, White and Blue Fruit Pizza

Ingredients

  • 16.5 oz tube refrigerated sugar cookie dough (I personally prefer Pillsbury as it tends to bake better than the store brand)
  • 8 oz cream cheese softened
  • cup sugar
  • ½ tsp vanilla extract
  • 6-8 medium strawberries (end up with 22 slices)
  • 44 small blueberries
  • 5 blackberries

Instructions

  • Set your oven to 350°F so it’s fully heated before baking.
  • Cut a round piece of parchment to fit your pizza pan. Place it on the pan and lightly coat it with cooking spray to prevent sticking.
  • Press the dough evenly into the pan, spreading it all the way to the edges to form a uniform crust.
  • Bake for 15-18 minutes, until the crust is set and lightly golden.
  • Remove from the oven and let the crust cool on a rack for about 30 minutes, or until completely cooled.
  • In a medium bowl, beat the cream cheese, sugar, and vanilla until smooth and spreadable, similar to frosting.
  • Spread the mixture evenly over the cooled crust, covering the surface edge to edge.
  • Remove the stems from the strawberries and slice them into even pieces.
  • Arrange the strawberry slices around the outer edge of the pizza.
  • Place a blueberry between each strawberry slice, then add a second row of blueberries slightly offset.
  • Add another layer of strawberry slices just inside the blueberries.
  • Finish by placing blackberries in the center, fanning them out to fill the space.
  • Refrigerate for at least 1 hour before serving so everything sets and slices cleanly.
