Ingredients

  • 1 lb lean ground beef
  • ½ cup bread crumbs
  • 1 egg
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ cup ketchup
  • 2 tbsp brown sugar
  • 3-4 medium potatoes, diced
  • 8 oz fresh green beans
  • 2 tbsp olive oil

Instructions

  • Preheat the oven to 400°F. Line a large sheet pan with parchment paper or lightly grease it to prevent sticking.
  • Wash the potatoes and cut them into small, even-sized cubes so they roast evenly. Trim the stem ends from the green beans and set both vegetables aside.
  • In a small bowl, stir together the salt, pepper, garlic powder, and onion powder until well combined.
  • Add the ground beef, breadcrumbs, egg, and half of the seasoning mixture to a large mixing bowl. Mix just until everything is combined,
  • Then divide the mixture into four equal portions and shape each into a mini meatloaf. Arrange them on the sheet pan.
  • In a separate small bowl, whisk together the ketchup and brown sugar until smooth. Brush the mixture generously over the tops of each mini meatloaf.
  • Place the diced potatoes and green beans in a large bowl. Drizzle with the olive oil, sprinkle with the remaining seasoning mixture, and toss until evenly coated. Spread the vegetables around the meatloaves.
  • Bake for 25 to 30 minutes, or until the meatloaves are cooked through and the potatoes are tender. Serve and enjoy!
