Preheat the oven to 400°F. Line a large sheet pan with parchment paper or lightly grease it to prevent sticking.
Wash the potatoes and cut them into small, even-sized cubes so they roast evenly. Trim the stem ends from the green beans and set both vegetables aside.
In a small bowl, stir together the salt, pepper, garlic powder, and onion powder until well combined.
Add the ground beef, breadcrumbs, egg, and half of the seasoning mixture to a large mixing bowl. Mix just until everything is combined,
Then divide the mixture into four equal portions and shape each into a mini meatloaf. Arrange them on the sheet pan.
In a separate small bowl, whisk together the ketchup and brown sugar until smooth. Brush the mixture generously over the tops of each mini meatloaf.
Place the diced potatoes and green beans in a large bowl. Drizzle with the olive oil, sprinkle with the remaining seasoning mixture, and toss until evenly coated. Spread the vegetables around the meatloaves.
Bake for 25 to 30 minutes, or until the meatloaves are cooked through and the potatoes are tender. Serve and enjoy!
