Ingredients

  • 2 cups baby spinach
  • 1 cup sliced strawberries
  • ¼ cup walnuts
  • ¼ cup Feta cheese
  • 1 ½ tbsp balsamic vinegar
  • 1 tbsp olive oil

Instructions

  • Rinse and pat the strawberries dry, then slice them into thin pieces. Set them aside while you prepare the dressing.
  • In a small bowl or measuring cup, whisk together the balsamic vinegar and olive oil until the dressing is well combined.
  • Place the baby spinach in a medium mixing bowl. Add the sliced strawberries, crumbled feta, and walnuts.
  • Drizzle the balsamic dressing over the salad, then gently toss until the spinach and toppings are evenly coated. Be careful not to crush the strawberries.
  • Serve immediately while the spinach is crisp and the strawberries are fresh. If you'd like, top with a few extra walnuts or feta just before serving.

Notes

If you're making this salad ahead of time or taking it to a potluck, keep the dressing separate and refrigerate it until you're ready to serve. Toss the salad with the dressing just before serving to keep the spinach fresh and crisp.
